Another totally customizable meal. What's in your fridge? What are your favorite combos?
Here I give one great go-to taco suggestion but, honestly, throw in whatever else you like!
Note: A taco recipe does not require quantities. Get enough tortillas for the people you are feeding and vary filling ingredients based on appetites!
- tortillas - corn or wheat but make sure they are vegan and don't contain lard, butter, eggs, milk, etc.
- sweet potatoes
- olive oil
- onions, diced or sliced
- garlic, sliced
- greens - chose from kale, chard, spinach, etc., torn or cut into pieces
- salt
- cumin
- black beans (refried or whole) OR vegan sausage, sliced into half moons
- avocado, sliced
- hot sauce
- lime
- Peel and cube the sweet potato. Cut them into sizes that will fit in a tortilla - the smaller you cut them, the faster they'll cook.
- Boil the sweet potato until soft OR roast them in the oven with a bit of oil and salt, again, until soft. 375 degrees F should work fine for this. Set aside when done.
- Meanwhile, sauté up the rest of the filling ingredients. Warm some oil in a pan over medium heat. Sauté the onions until they get a bit translucent and browned. Add in the garlic and cook for 2 minutes. Add in the greens and cook until wilted. Top with salt and cumin and cook for 1 minute more.
- Add the beans into the frying pan to heat or cook them in a separate pot just to warm them up. They can even be microwaved. If you are using vegan sausage, add it into the frying pan to heat and brown it.
- Heat a clean frying pan over medium heat, no oil. Heat up the tortillas one at a time, flipping as they begin to bubble and/or brown.
- Fill up your tortillas! Add in sweet potato, the sautéed veggies, the beans or sausage and top with avocado slices, lime juice and hot sauce. Add more salt if needed/desired!
