Spring Rolls
Get ready to get fancy without working too hard! It takes a bit of practice to figure out how to make spring rolls look good, but they always taste good. Again, mix things up as you like!

One of my favorite things about spring rolls is that it's a great way to have a bunch of fresh, raw veggies. Salad in a way better form.

Like sushi, these are a really fun meal to make with dinner guests. Everyone can make their own.
Ingredients
No amounts here - make up enough for you or your dinner party!
Filling
  • rice noodles
  • purple cabbage, cut into thin strips
  • carrot, cut into thin strips or shredded
  • red pepper, cut into thin strips
  • baked tofu, cut into thin strips (can buy prepared or bake it yourself)
  • cilantro, thai basil (if you can find it!) and/or mint
  • green onion, sliced thin
  • lime
  • peanuts, chopped (optional)

Disclaimer: if you haven't made spring rolls before, it takes some getting used to. The wrappers stick to themselves a bit and can tear. Patience!
  1. Cook up rice noodles according to package directions. Rinse with cool water and set aside.
  2. Line up all your filling ingredients and prepare to make up some spring rolls!
  3. Fill a shallow tray with fairly warm water - even a bit hot. You can use a sheet pan for this.
  4. Submerge a wrapper until it turns translucent and pliable.
  5. Move the wrapper to a plate.
  6. Add ingredients in the same direction - slices lined up - in the lower 3rd of the circular wrapper (the side closest to you). Leave a bit of the wrapper nearest to you uncovered by filling ingredients so that you can use this part to roll over the ingredients to start your roll. Top with herbs, green onions, lime juice and peanuts as desired.
  7. Roll the uncovered section of wrapper closest to you over the ingredients and keep rolling it, folding either side in, from the left and right, over the roll as you roll. If you need a visual, here's a good one (ignore the "meat filling"!).
  8. Repeat until all the ingredients are used up.
  9. Pour some dipping sauce into a small bowl or in a puddle on your plate and enjoy those fresh rolls!
