Miso is another food commonly used in Asian dishes that vegans love. It is a paste made from fermented soybeans (sounds delicious, right?!) and it is a great way to add some “umami” flavor to your sauces. Umami is that brothy, savory taste – not super salty necessarily, though miso is salty.
Miso comes in a variety of colors which have slightly different tastes. Vegans like to add miso to salad dressings, soups and, sauces so don’t be surprised if you see it in a recipe you’re trying.
