If you are snacking on cashews, then your best bet might be to go with roasted and salted. (That’s what I prefer anyway.) But, we vegans do something sneaky with cashews. We use them to make our non-dairy cream sauces.
Simply soak the cashews so they soften and then they can be blended up in a food processor or in a tough blender to make a cream sauce. People add in broth and/or water, lemon, nutritional yeast, salt and other spices to round out the flavor.
You’re going to want a stash of these for your homemade mac & cheese!
